Beurrage is a small-scale bakery operating out of Pilsen, supplying our neighborhood and our city with handmade breads and pastries.

We believe that baking is not merely a means to a delicious end. The process is our passion. There are many intricacies in composing a loaf of bread or a flaky croissant, and we strive every day to unravel another piece of the mystery.

In our quest to understand the functions of our ingredients and our methods, we often make amendments to our menu and our baking routine. We're always inspired to delve deeper into the production process, taking greater control over the outcome of our products - and improving them one step at a time.



The baker's repertoire can be largely divided into three main categories, and we strive to represent all of them.

BREAD is often said to be the foundation of our diets and our civilizations. One of our oldest inventions, it has seen us through all stages of our history, playing an integral role in the most ordinary aspects of our daily lives as well as some of our most important and momentous mythical and historical events.

Our bread is inspired by the recent artisanal renaissance. We favor slower production methods that coax the most flavor out of the fewest high-quality ingredients. We use a unique sourdough starter - one we cultivated and nurture ourselves - to produce bread with a complex flavor unlike any you've had before.

PASTRY is on the other end of the spectrum of bakery production. Having reached its fullest potential in the modern era of highly refined ingredients, classic European pastry relies heavily on sugar, eggs, and especially butter for flavor and texture. Pastry products also tend to be much more carefully "designed" and less rustic than the typical loaf of bread.

At Beurrage, we are most fascinated by pastry techniques that require no added chemical leaveners. (Sorry, you will find few cookies and cakes here!) Instead, we focus primarily on pastries requiring delicate skill and deep knowledge of the ingredients' properties and potential. Puff pastries, tarts, and cream puffs are but a few of the items you can expect from us.

VIENNOISERIE is a third category of baked good that falls somewhere between bread and pastry -- truly the best of both worlds! These products are typically risen with yeast and depend on knowledge of bread production for full depth of flavor; on the other hand, they are also highly enriched with pastry ingredients and often require similarly delicate pastry skills.

Because we are passionate about the full range of the baker's repertoire, an abundance of the products we offer land in this third category.
